Flax Chia Banana Chocolate Muffins

Average Read Time: 2-3 Minutes

I love a good muffin. Easy to make, easy to eat on the go, delicious, and great for packing in some secret nutrition for pregnant and postpartum families!

I wrote this recipe as I took care of my best friend’s first child while she was recovering from the birth of her second! So this recipe is on honor of her and her two beautiful daughters <3

Ingredients:

3 very ripe bananas*

1.5 cups flour**

1 tsp. baking powder

1 tsp. baking powder

½ tsp salt

1 tsp vanilla***

¾ cup white sugar

2 tbsp. brown sugar

1 egg

1 tsp cinnamon

½ tsp nutmeg

2 tbsp chia seeds

2 tbsp ground flax seed

Full bag of chocolate chips (or 2-3 handfuls)

Instructions:

  1. Pre-heat the oven to 350 degrees.

  2. In a bowl, mash up the banana. Can be chunky or smooth, based on your preference.

  3. Add in all the dry ingredients and mix with the banana.

  4. Add in the vanilla, sugars and egg, and continue to mix.

  5. Add in spices and seeds and mix gently (doesn’t need to be completely mixed in).

  6. Add in chocolate chips and mix.

  7. Bake the muffins for 20 minutes, or until a knife comes out clean!

Notes:

*I’ve actually found that bananas from the freezer are even better!

**I’ve used regular, unbleached flour. I’ve also used whole wheat flour. I don’t change the amount based on type of flour, but play around with that if you want!

***I’ve used rum here for delicious results!

For some added protein, add in nuts!

Enjoy! These muffins are great with tea, as a side during breakfast, or used as a mid-day treat!
